4 boneless skinless chicken breasts cleaned and cut into thirds
1 can drained baby peas
1 can drained medium black olives
1lb sliced mushrooms
Olive oil
Fresh Italian parsley - chopped
Salt and pepper
1 or 2 24oz jars Quattro Fratelli Marinara Speciale Sauce
Heat the olive oil in a saute pan. When oil is hot add chicken pieces - salt and pepper to taste and saute till browned on both sides. Remove chicken and add mushrooms to pan saute till cooked and return chicken to pan. Lower heat to med. low. Add one or two jars of Quattro Fratelli Marinara Sauce and add the baby peas and black olives. Simmer until well warmed and flavors have had a chance to combine (about 10 minutes). Move to serving platter - sprinkle with fresh parsley and serve with crusted Tuscan bread...can also be served over polenta!
